- Reduce the heat to medium low to medium and add onions to the pan. Cook onions in the bacon grease until they have browned; about 8 minutes. Remove from pan and set aside.
- Remove potatoes from the boiling water and strain them.
- Being careful not to burn yourself. Wipe pan with a paper towel to remove most of the bacon grease.
- Return the sauté pan to the stove and heat duck fat in it over medium high heat.
- Once the duck fat is hot add the potatoes to the pot. Cook potatoes for roughly 10 minutes, or until they have reached a doneness of your liking. Make sure to stir the potatoes while they are in the pot so that they cook on all sides evenly.
