  1. Add potatoes to 4 quarts of salted boiling water.  Boil for 7-10 minutes or until you can stick a fork through them with a little force.
  2. In a sauté pan that can handle the amount of potatoes that you are making fry the bacon over medium high heat.  Cook bacon though, but be sure not to burn it, and remove it from the pan.
  3. Reduce the heat to medium low to medium and add onions to the pan.  Cook onions in the bacon grease until they have browned; about 8 minutes.  Remove from pan and set aside.
  4. Remove potatoes from the boiling water and strain them.
  5. Being careful not to burn yourself.  Wipe pan with a paper towel to remove most of the bacon grease.
  6. Return the sauté pan to the stove and heat duck fat in it over medium high heat.
  7. Once the duck fat is hot add the potatoes to the pot.  Cook potatoes for roughly 10 minutes, or until they have reached a doneness of your liking.  Make sure to stir the potatoes while they are in the pot so that they cook on all sides evenly.
  8. using a pair of tongs remove potatoes from the duck fat and place them in a metal bowl or pan.
  9. Add the bacon, onions, cilantro, salt, and pepper to the potatoes and it all together before you dig in.
