Baked Brioche French Toast

What do you when you have leftover brioche buns from hamburgers you made the night before for dinner?  You take a couple of them and you make baked brioche french toast.  Whether that be a couple for you or you and your significant other or you and a friend.  It's really amazing how mixing a few ingredients together and throwing them into the oven come together as an amazing meal.

I came up with this recipe one Sunday morning when I was trying to figure out how to use some brioche hamburger bunds before they went stale.

After scrolling Pinterest for a bit I caught a craving for something sweet and started going through my kitchen to see what all I had available to me.  After looking around I figured out that French toast would be the best bet.Now, how do I cook it?  I knew that the brioche was too soft to cook in a skillet how I normally make french toast so I decided to bake it... And there we have it!  Barked brioche French toast.

First step was to pull out my small ceramic baking ramekins, rub them with butter, and put the brioche into them.

Next thing was to grab all my wet ingredients and spices and combine them.  I used soy milk because it's what I had at the time, and it really came out well.  You can use whole milk instead of soy milk if you'd like to; it will give you a richer taste.

I poured enough of the milk and egg mixture into the ramekins to completely soak the brioche, but not so much that it would drown them.  A little bit of raw cane sugar on top and into the oven they went.

This picture is definitely one of my best of 2018.

25 minutes in the oven, some powdered sugar, fresh fruit, and maple syrup and it's time to dig in!

Baked Brioche French Toast

Ingredients

  • 2 brioche burger buns
  • ¾ cup unsweetened soy milk
  • 1 egg
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 tablespoon butter
  • 1 tablespoon raw cane sugar
  • Powdered sugar.
  • Maple syrup
  • Fresh fruit of your choosing.

Instructions

  1. Preheat oven to 400 F.
  2. Rub butter on inside of ramekins.
  3. Break brioche buns apart and add it to the ramekins.
  4. Combine the soy milk, egg, ground cinnamon, and vanilla extract.  Then pour it over the brioche in the ramekins.
  5. Sprinkle the raw cane sugar over the brioche and place the ramekins in the oven.
  6. Bake for 25 -30 minutes.
  7. I like to top my french toast with powdered sugar, fresh fruit, and maple syrup.  But this part is really up to you.

Notes

You can sub whole milk or any other milk of your choosing for the soy milk.
