1/4 cup flat leaf parsley, chopped (Or dry parsley flakes)
3 garlic cloves, minced
1/2 tbsp Creole mustard
2 tbsp all purpose flour
Juice of 1 lemon
1/4 parmesan cheese, grated
Salt & Pepper to taste
Olive oil
Instructions
Preheat oven to 450° F.
In a medium mixing bowl sit butter out to allow it to soften. Or microwave butter for 10-20 seconds; depending on your microwave. (If you choose to microwave be careful not to over cook)
Mix parsley, garlic, Creole mustard, flour, lemon juice, parmesan cheese, salt, and pepper and into butter.
Heat 1-2 tbsp olive oil in a heavy pan or skillet over medium heat.
Season filets on both sides with salt and pepper and add to pan.
Add filets to pan and cook for 2-4 minutes; depending on the thickness of your fish. You want to cook your filets about 75% of the way through. Flip filets and cook for 30 seconds to 1 minute.
Add a generous spoonful of butter mixture to the top of each of the filets and place pan in the oven.
Cook fish in the oven for 1-2 minutes; or until butter begins to brown a bit.
Remove from oven and add additional butter mixture
