Biscuits

  1. Cube butter into half inch pieces and place it in the freezer for 10 minutes.  While the butter is in the freezer mix together the flour, salt, sugar, baking powder, and baking soda.
  2. With a pastry cutter, fork, or your hands mix the butter into the dry ingredients.  Mix until your dough gets to the points where there is large excess of dry flour remaining.
  3. Pour in about a cup of the buttermilk and begin to mix it (by hand) into the dry ingredients.  Add the additional 1/4 cup of buttermilk as needed until there is no dry flour left.  Work the dough into a ball and place it onto a floured surface.
  4. Roll/pat the dough out into a square about 1" thick.  Cut the square into four pieces and stack them on top of each other.  Again roll/pat the dough into a square about 1" thick.
  5. Cut out your biscuits and transfer them into the freezer to firm up for about 15 minutes.  Preheat oven to 425 F.
  6. Remove biscuits from the freezer and rub the tops of them with melted butter.  Place them into the oven and bake for 22-25 minutes.
  7. After you take the biscuits out of the oven baste with lots of butter and enjoy them jelly, sausage gravy, fried chicken, or my personal favorite fig jam.

Fried Chicken

  1. Heat the canola oil to 350 F in a deep wall fish on the stove or a deep fryer.
  2. Beat the eggs with the hot sauce to make an egg wash in a medium sized bowl.
  3. Combine flour, seasoned salt, black pepper, and garlic powder in a shallow dish.
  4. Once the oil has come to temperature, one at a time dip the chicken breast halves into the egg wash, then into flour mixture. Make sure with each step you get a very good coating. After you have coated the chicken in flour add them to the hot oil. You can do 2-3 at a time depending on the size of your pan.
  5. Cook for 5-7 minutes, and then flip to cook for another 3-4 minutes. If you have a quick read meat thermometer it is a good idea to check the temperature of the chicken breasts in the thickest part to make sure they are cook through.

Tabasco Honey

  1. Combine honey and hot sauce.
  2. Enjoy. Pretty easy right?

Notes

Biscuits can be frozen for up to a month.  Just add 5-10 minutes additional to the cooking time.
